The first results of the project
Activated almonds were subjected to optimized extraction protocols aimed at recovering polyphenolic compounds with antioxidant action and obtaining the polysaccharide component interesting for prebiotic potential, in addition to an evaluation of the nutritional content in macro and micronutrients.
The comparison of the results obtained with those of non-activated almonds will allow to evaluate/optimize the effectiveness of the activation treatment in significantly improving the nutritional-nutraceutical properties of almonds. […]
